Chillon Castle Foundation and Badoux Vins wine specialist are taking part in a new and unique project for the Clos de Chillon wine.
Backed by five years of solid experience in exploring the depths of Lake Geneva, Chillon Castle and longstanding partner Badoux Vins Vineyard in Aigle have everything they need to offer the ideal conditions for preservation; stable conditions in which the Clos de Chillon bottles of Chasselas wine can really thrive.
THE KEY TO THIS GREAT WINE'S SUCCESS
This wine is perfectly preserved, with the help of a few, completely natural criteria.
The first of these is 100% humidity, which prevents evaporation during the first three years of immersion. Secondly, only minimal amounts of air can get into the bottles. Finally, the very low oxygen levels in the water mean the wine can mature perfectly.
Immersing the wines bottles 30 metres under water makes sure they are in complete darkness, meaning there is no yellowing from UV rays and the flavour remains unchanged. Temperature is also kept at a constant, chilled level, varying from 12 to 13°C. The pressure at this depth also vastly reduces movements and any exchange between the contents of the bottle and its immediate surroundings.
1,000 bottles of white Clos de Chillon are carefully stored in a cage suspended on a cable and lowered into the water. They are full to the brim with no air gap. Finished with a cork and stamped wtih the 2015 Clos the Chillon label, each bottle has its own individual identity, even if the label itself may disintegrate. Each cork is, therefore, coated with wax for ultimate protection.
