For centuries there was a wine cellar and a wine press at Chillon. Since 2011, Clos de Chillon has reconnected with its past.
Some forty odd barrels are now installed in the first of the castle’s underground rooms, not far from the prison where François Bonivard, the protagonist of Lord Byron’s famous poem The Prisoner of Chillon, had been chained up.
CLOS DE CHILLOM
This Grand Cru, aged and bottled at the castle by winemaker and merchant Henri BADOUX SA – VINS, reflects the values of the Foundation that runs the castle’s activities: tradition, prestige and quality.
"Grand cru (GC) - AOC Lavaux": This name is reserved for wines that are entitled to use the name of a production area or town, and that is made with 90% of grapes harvested in that production area or town, no more than 10% of grapes come from another production area in the same winemaking region. These wines must be made from harvests with a natural sugar content is 5 degrees Oechslé higher than the minimum demanded for the AOC. This is 70 °Oe for the Chasselas (white wine) and 80° Oe for the Chillon red.
The castle’s 12'500 m2 vineyard is located in the «Lavaux» appellation region. It stretches out gently along the contours of Lake Geneva and benefits from the microclimate of Montreux.
The winegrower in charge of the vineyard tends it with skill, care and respect for the environment, applying the sustainable cultivation technique known as IPW (Integrated Production of Wine).

Both these wines have been skillfully selected by Daniel Dufaux, oenologist and manager of Henri BADOUX SA – VINS, and President of the Union of Swiss Oenologists.
